According to the American Institute for Cancer Research, cancer rates could decline as much as 20 percent if people were to eat five or more servings of fruits and vegetables each day.
Even with a balanced vegetarian diet plan may be necessary for some to supplement with B12, zinc, iron, and vitamin C. For example, to get enough iron, you need to eat foods rich in vitamin C that are useful in iron absorption such as cabbage, cauliflower, and broccoli. Typically, vegetarian diets contain lower amounts of minerals because foods of plant origin contain dietary fiber, phytate, and oxalate which can decrease the bioavailability of minerals.
When switching to a balanced vegetarian diet plan it is important to learn how to combine foods properly so you can receive adequate protein and avoid vitamin or mineral deficiencies.
